The crisis has hit the favorite snack of millions of Israelis – how much has it become more expensive?


In recent years, the price of hummus, one of the most popular dishes in Israeli cuisine, has increased significantly. According to a study by the Institute for Retail Research, the cost of an average serving of hummus in restaurants across the country has increased from NIS 22-28 in 2020 to NIS 35-45 today, an increase of about 50%.

Restaurateurs who specialize in making hummus cite several main reasons for the price increase. These include rising prices for raw materials, including hummus and tahini, an increase in the minimum wage, and rising rents. According to market data, the cost of a kilogram of raw hummus has increased by 40% over the past three years.

Despite rising prices, hummus remains a firm favorite among Israelis. According to a survey of 500 people, the average Israeli visits hummus restaurants twice a month. At the same time, 65% of participants noted that they prefer to enjoy this dish in the morning or afternoon, and the greatest demand is observed on Fridays.

The annual turnover of the Israeli hummus restaurant market exceeds a billion shekels, and there are more than 600 establishments throughout the country offering this popular dish. Increasing competition in the market has led to its division into two main segments: traditional hummus restaurants, where the price of a serving is 30-40 shekels, and “boutique” establishments offering premium dishes at prices ranging from 45 to 65 shekels.

According to the survey, 70% of consumers consider the optimal price for a serving of hummus to be 25-30 shekels. At the same time, 45% of respondents are willing to pay more in specialized restaurants if the high cost is compensated by the quality of the dish.

Previously, “Cursor” wrote that hummus is one of the most popular dishes of Middle Eastern cuisine, prepared with chickpeas, tahini, olive oil, lemon juice and garlic. This nutritious treat has gained popularity around the world due to its rich taste and rich content of healthy fats, fiber and plant protein.
