Researchers explain that the two-step process leverages different physical effects. The microwave heating stage raises the internal temperature of the potato pieces more quickly than oil-mediated heat transfer, reducing the time fries are exposed to hot oil. The subsequent conventional frying stage provides surface browning and textural crispness through rapid moisture evaporation and the Maillard reaction, while requiring less total frying time than a full-duration immersion would.

The team reported that fries prepared with the combined method were crispier in less time and absorbed less oil than fries subjected to conventional frying alone. Those outcomes are attributed to reduced oil uptake during the initial microwave step and a shortened exposure to frying temperatures. The researchers emphasize that the method alters the balance between internal cooking and surface dehydration, which in turn affects final texture and oil content.

Potential benefits cited by the investigators include quicker preparation and a lower oil content in the finished product, though the research summary stops short of quantifying nutritional outcomes. The authors recommend further trials to standardize timing and power settings for different potato cuts and to evaluate taste and shelf-life under practical kitchen and industrial conditions.

As described, the method represents an incremental change to existing processes rather than a wholesale replacement of frying. The team suggests that commercial kitchens and food manufacturers could assess the technique as a means to conserve oil and reduce frying times while maintaining the textural qualities that consumers expect from traditional French fries.
