Fattal Hotels to transition THE JAFFA into kosher luxury hotel starting May 1

Fattal Hotels announced that beginning May 1, 2026, THE JAFFA, one of Israel’s most prominent luxury hotels, will operate as a completely kosher hotel, marking a notable shift in the country’s high-end hospitality sector.

The hotel, part of the Fattal Limited Edition collection, will for the first time offer a full luxury hospitality experience under kosher certification. According to the company, the transition will include all food and beverage operations and events, while maintaining the design standards, service level, and culinary approach associated with the property.

The move reflects what the company describes as a broader effort to integrate kashrut into the luxury hospitality experience without altering the hotel’s character. All hotel operations related to food will be conducted under kosher supervision, while preserving the aesthetics and culinary standards identified with both THE JAFFA and the wider Fattal Limited Edition brand.

As part of the transition, the hotel’s flagship chef restaurant, Giardino, will also become kosher. The restaurant will operate as a high-end kosher meat restaurant, including fish, and will remain open to both hotel guests and outside visitors by prior reservation. It will offer lunch and dinner services, as well as tailored culinary experiences for weekends and holidays.

Giardino is located in the courtyard of THE JAFFA hotel, housed in a 19th-century Neo-Renaissance building in the heart of Jaffa. The restaurant combines preserved historical architecture with contemporary design and offers a seasonal menu inspired by international haute cuisine with Mediterranean influences. The menu, which emphasizes fresh, local, and seasonal ingredients, is updated every three to four months.

In addition, breakfast service at the hotel will also transition to kosher. It will be offered in a Mediterranean-Italian dairy buffet format alongside a selection of à la carte dishes, including breads, pastries, boutique cheeses, fish, salads, and other gourmet items. Breakfast will be available to both hotel guests and outside visitors with prior reservation.

Nadav Fattal and Assaf Fattal, Joint CEOs of Fattal Hotels Israel, said, “The Jaffa hotel will continue to lead international luxury standards, now also under kosher certification. This move connects a high-level hospitality experience with the world of kashrut, while fully maintaining the hotel’s unique DNA. Since the hotel joined the Fattal network, we received inquiries from audiences who wished to stay but were unable to do so; this move now allows them to enjoy one of the most unique luxury hotels in Israel. As part of this process, the chef restaurant Giardino will also operate under kashrut and continue to offer high-level haute cuisine—a combination that is uncommon in the world of luxury hotels.”

THE JAFFA hotel, recently added to the Fattal Limited Edition collection, is located in a restored 19th-century Neo-Renaissance building in the heart of Jaffa, within walking distance of the Mediterranean Sea and central cultural and entertainment areas of Tel Aviv-Jaffa. The property incorporates preserved historical elements, including a chapel, alongside modern design features, a luxury spa, an outdoor pool, and its signature restaurant.

The combination of historic architecture and contemporary design has positioned THE JAFFA as one of Israel’s notable luxury hospitality destinations.
